Cut the tofu into bite-sized pieces. Toss them in the corn starch. Spray the air fryer baking sheet with oil, then put the tofu on the tray and spray the tofu bites. The thicker the potato starch coating, the firmer and crispier the tofu will be.
Set the air fryer to 18 min at 375, using preheat. Once the preheat is done, put the tray in. Halfway through, take the tray out and rotate the pieces.
When the tofu is a few minutes away from finishing, prepare the sauce. Heat the soy sauce, chili garlic sauce, brown sugar, rice wine vinegar, garlic, and ginger in a sauce pan until the sugar dissolves and the sauce gets a little thick and bubbly.
When the tofu is finished baking, toss the pieces in the sauce. Then drizzle toasted sesame oil and sprinkle sesame seeds to finish.
Eat over rice. There's not a ton of extra sauce, but usually there will be just enough to make he rice tasty. I find the sauce gets tastier as it cooks down, but if you cook it too thick, there won't be enough sauce to go on the rice.
If you don't have cooking spray, you can toss the tofu bites with regular oil in a bowl. The spray is faster and it's easier to tell how much you need, but regular oil works fine too.
If you don't happen to have ginger and/or garlic but are cravin this, the results will still be tasty.
