Preheat oven to 250*F.
Mix sugar, cinnamon, and salt.
Beat egg white and water until foamy.
Stir egg white mix and nuts to coat. Then add sugar and stir until coated fairly evenly. The sugar will be wet.
Line a baking sheet with parchment paper. Spread the nuts evenly. Bake, stirring every 15 minutes, until toasty (1 hour.) The sugar coating will be very hot when they're done, so make sure to let them cool before sampling!
