Orange Spice Cookies

350 *F for 12-15 min

Directions:

Zest the oranges. Note that the zest gets split between the cookie dough and the coating.

In a large bowl, combine the oil, butter, sugars, and zest. Beat until combined but avoid overmixing at this stage. If the butter is creamed until it is light and flully, the cookies will form a dome instead of flattening.

Then add the egg, vanilla, and spices and beat until smooth.

Mix the dry ingredients together. Then add to wet and beat until smooth.

Refrigerate the dough until it is chilled and firm. Ideally give it about 2 hours to overnight. (If you shorten this time, the cookies will still turn out okay but rolling them is a little more of a hassle because the dough will be softer and stickier.)

Mix the coating, rubbing the orange zest into the sugar until well blended.

Preheat the oven to 350*F.

Scoop cookies by the tablespoon (level), form into balls, and then roll in the coating.

Bake for 12-15 minutes, until the edges just start to brown.
