When that's creamed and lightened in color, blend in egg.
Blend in the vanilla.
Blend in the dry ingredients, about 1/3 at a time.
Mix in the chocolate chips.
Form into balls, and put on parchment paper on cookie sheet.
Bake for about 15 minutes.
Notes:
For this and a lot of the cookies, you can make mini cookies, just
use less dough. I try to make it so that when they're baked, they're
anywhere between the size of a dime and a nickle. They make a fun change,
and are very munchable.
Bake about 10 minutes for mini cookies.
The baking temperature on these cookies is a little lower, because they burn easily.
Sweet rice powder is also called sweet rice flour, or glutinous rice flour.
You can use 1 stick of soft butter instead of the coconut oil.
