Pressure Cooker Black Bean Soup
Ingredients:
In the pressure cooker:
- 2 cups black beans
- 1 jalapeno, minced
- 1 large or 2 small onions, diced
- 1 bell pepper
- 2 teaspoons ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon salt
- 1 cup orange juice
- 7 cups water
Added later:
- 1 8-oz can petit diced tomatoes or 1 cup salsa
- 1 carrot, diced
- frozen okra
- frozen corn
- 1 sweet potato
- cilantro
Directions:
Pressure cook the first set of ingredients for 40 minutes, then allow a slow
pressure release (at least 30 minutes).
Add the next set of ingredients and simmer on the stove until the sweet potatoes
cook through and the flavors blend (at least 30 minutes.)
If the soup is thin, remove some and blend it. However, this soup comes out a bit
thicker than the version using canned beans.
