This is a Scandanavian recipe adapted from Sundays at Moosewood. It's called a pancake, but to me it tastes more like an extra-dense cheeseless quiche.
Mix carrots, onion, and bread crumbs or wheat germ.
Combine flour, salt, and spices. Add eggs and milk and mix until smooth. Combine with carrot mix.
Preheat oven to 450*F. Heat a bit of oil in a cast iron skillet. Pour in pancake mixture and spread flat. This helps make a bottom crust that will release easily later.
Immediately transfer the pan to the oven and bake for 20 min. Then reduce the temperature to 350*F and bake for another 10 to 15 min.
Serve immediately with cranberry sauce, sour cream, or apricot preserves on the side. The sweet fruit contrasts with the plain, hearty pancake.
