I've had mediocre luck making excellent mushrooms on the stovetop. Thanks to Julia Child, I know I shouldn't crowd the pan…but impatience usually wins out. Then I saw this recipe for oven-roasted mushrooms on Serious Eats and gave it a try. So easy and so good!
Preheat the oven to 375*F. Line a baking sheet with aluminum foil.
Clean and quarter the mushrooms. Toss them with olive oil, salt, and pepper.
Bake for 15 minutes, then pull them out and carefully pour off any accumulated liquid, reserving it for some other use. (It's very flavorful and can be used for soups or dressings.)
Put the mushrooms back in and bake until done. Time will vary depending on size. (Serious eats told me to expect 45 min total roast time, but when I roasted little ones, they were done after just 30 minutes and didn't give off enough liquid to pour free.)
